When they have more than the normal amount of joints on, your finger for example. I think its pretty obvious.

uh, what.

i thought it was just a term for people that are really flexible and/or can dislocate stuff and the like.

It is, I can dislocate my shoulders, thumbs, some toes and particaly dislocate my neck, ie, put some of the bones at the top of my spine to the left or right. Avergae flexabilty though.
