Smooth. But with animation, you want to exaggerate the point you're getting to. (Angry face: eyebrows tilted in, big frown, scrunched nose, ect.)

Also, YouTube cuts things off. Make time at the beginning and end. Like me, I put a second of black at the beginning and end of all of my videos.
