My friend's buying it, I'll probably play it when I go to his or he comes round to mine but I've never been a huge fan of the series and this game doesn't look much different from all the other previous games in the series.

Then you obviously haven't seen/played any of the previous installments of GTA. There's plenty new and improved aspects of this game from the previous ones. That's the main reason why it's being so raved over. Read a review and you'll see what's so special about this installment to the series.

Wikipedia isn't a video game review site. It's not going to give that in depth of a review on it. It's just going to tell what it is and relate it to the other installments.

Read through all those links. There's obviously much more introduced in this game than previous GTA installments. If you've only played one GTA game and only read about this one from a Wikipedia article, then how are you supposed to form this opinion?
