Fight Night Round 3, Tekken, DoA.

Tekken 5 for PS2.
Once you get bored of leveling the characters to Tekken Lord, play Devil Within mode. It's shit, but yeah.

Not that many good games out that don't involve weapons and aren't beat 'em ups.
