I've never seen Dexter or Criminal Minds before so I doubt I can give a good comparison. But I read a forum post that might be useful:

"Dexter is usually a black comedy, while Hannibal is deadly serious (except for rare but welcome moments of comic relief). Dexter stars the killer, whereas Hannibal is essentially a supporting actor in his own show, with Will Graham taking the lead."

The show seems to be very character oriented, focusing on the psychological impacts that chasing and trying to "empathise" with psycho criminals does on a person (unstable person). So it isn't entirely directed towards solving a crime, which I personally enjoy. If you ever watched the Sherlock Holmes tv series, it has some similarities with that show.

But I should add that the show balances out the subtle psychological horror aspect with some really explicit and gruesome scenes.

Although the guy certainly knows alot, he is not like Sherlock or House who are somewhat "arrogant" about their ability. Using his skills has some major back lashes, and causes a lot of inner conflict. Unless I'm misinterpreting things, the main character is reluctant to use his ability.

Recently watched the Million Dollar Baby. It did a good job at making me almost cry, but alas.
