For ele vs order turtle, anti turtle on short maps you can dive castle archers with earths and turn them into miners as they leave to keep your ranged units constantly applying some pressure on the enemy while building your eco up. Longer maps this gets less viable and the rewards reduce with far more delay on dived earths becoming miners.

If they do get a wall up then if your eco can handle it going for a v and tping over the wall to make two clones (with upgrades) can seriously hinder them setting up archer support. If they go for defending albows then you can simply take control of one albow and let them kill it with their others to force them to lose units every time a ghost spawns.

Worst case scenario and they get up a turtle you can't break then your best response will probably be various units to kill off anything that might assasinate your vs (like spears and ninjas) via using cycloids/charrogs/infernos and then creating a v mid fight afterwards so it will be safe as the opponent never gets a chance to shinobi it.

Elementals have pretty weak raw damage as most of their damage output relies on DoTs that don't work on structures and don't work that well on turtled comps or the turtle setup. If you can protect your vs with enough body blocking from other units (mostly charrogs) against the giants and killing off assasins then just taking control of giants should work quite well as a counter. Vs are actually cheaper so having as many as 2/3rds of the opponents giants shouldn't be that hard. Just remember NEVER press the attack button once a v has possesed something as this will cancel the possession.

Ending the game against 3 CAs is tough unless you can steal a giant to use as the tank. V damage with a charrog in the top corner to block arrows is probably the fastest way to take down a statue, which you'll need to do fast against 3 CAs because they will eat up your tanks. Cycloids with protect (in the top corner) can also block arrows to let your squishy units deal out damage unscathed.
