Well I can't find the details but I know the "original plot" was not the case. Especially since if it was, there wouldn't be so many similarities at the beginning of the show but then it diverges off to a different plot entirely. Usually when they make differences it's subtle, for example:
the original full metal alchemist was different from the manga, but not radically. It's all minor things or added story archs "except for the ending of the show".
Hellsing diverged off into it's own plot entirely after a certain point because they ran out of actual manga chapters to base episodes on. This happened to other shows such as gantz, except in that show they just put a slapdash ending in and call it a day. Hellsing had not fulfilled all it's episodes it was booked for, so they had to heavily improvise. It would make no sense for them to follow the plot closely but then suddenly change their minds and do their own thing.

and anyway, I'm going to have to agree with jutsu on this right here. The origional hellsing story was entertaining even if the animation wasn't the best. That doesn't really matter much to me. The new one I just got bored with and dropped... I mean....... Nazis?.. Really?
Admittedly hellsing ultimate is much more stunning visually, but as I've said the original has substantially more style and atmosphere. Ultimate almost feels like over time the fans have gotten to them and slowly pushed more and more arbitrary violence into the series.
