To be in all fairness and honesty, I think I would go insane from loneliness at one point.
Immortality I can deal with. I can deal with the fact that I'll never have the release of death so I wouldn't dwell on that too much.
Now as far at the cryochamber goes, I don't think I would actually use it all that much. Same goes for the light speed.

Personally I would map out the entire universe and set worm holes at crucial points in which I see fit to travel back to and see how life has changed there.
You said we cannot return to earth...so why not spend devoting my immortality to making a new earth? A new species of being and help them flourish and grow into something that I can be proud I created...so long as one of them doesn't get the idea to build a ship like the one I was just entrusted too...

I think, to make it slightly more interesting, I would do the same thing on multiple planets within a closely related area. I would do studies with each species too (Amount of land, genetic activities, leave behind clues of what I've done.) Pretty much play mind games. Leave them to it for awhile, set worm holes to watch each one individually and allow them to grow and prosper, eventually to find one another and be either friendly or hostile. Their choice.

Dude wouldn't it be so awesome to create an entire new planet with sentient lifeforms and everything, and just be their god?
They would build monolithic temples in your honor, and every time you showed up it would be a worldwide celebration.

I wouldn't really know, I'd get homesick pretty easily, leaving behind everybody I know (except for the whole one person thing), I like to go to new places, so....... no idea.
