Not everyone is going to know the Japanese definitions. For those who don't, here you go.

Harem - A Harem anime is generally based around one character, male or female surrounded by people of the opposite gender all with a (sometimes mildly suggested) love interest in said character, it applies both ways.
Yuri - A Yuri anime is basically around GirlxGirl (lesbian) characters, and usually pretty sexual.
Yaoi - Basically Yuri with a gender reversal.
Hentai - In simple terms, it's anime/manga porn. And usually nothing else.

By the way, are these really all you could think of? There's a lot more genres in the media, and they all apply to anime. You're really limiting choice with these.

Maybe it's because I haven't watched any anime since pokémon, but I'm having a hard time understanding why anyone would not pick hentai.
