Oh man, a friend of mine does that all the time in his games. In fact, one time he said he managed to infect nearly everyone on the planet before triggering symptoms so that there was a really fast, mass extinction in a sense.

I tried that a few times and it never worked for me.
I kept losing until I tried keeping infectivity and lethality at a balance, and making sure it was drug resistant.
I found it fairly easy to win with bacteria from South Africa, many countries to invade in addition to a generally poor region seemed to do pretty well.
With virus I failed always until I started way in the north, Greenland, Iceland or Canada, though the same strategy worked for both virus and bacteria, for me at least.

I haven't tried fungus, I hate that you have to unlock the different game modes, I wanna know how the newer once are different.

They just have unique abilities. And some of them are harder to spread / harder to kill etc.
