I'm not really one to ask for advice, but I'll see what I can do.

I never liked Archeops to begin with because he gets walled pretty bad, in the sense that while he has great attacks and speed, a wall + entry hazards + status infliction hurt Archeops a lot, and defeatist kind of makes Archeops pretty useless so you have a dead weight pokemon in your party. Metagross in your party is a much better physical offender, so the need for Archeops isn't necessary. Since Metagross already has some of Archeops' moves like Earthquake, I think Crobat is a good replacement since he could be used as a flying type attacker to make up for Archeops, and he is much faster.

I don't know how much I agree with an Altaria change (unless your speaking megas), and this one really depends on personal preference since they fill different niches. I'm assuming Ampharos would be your special attacker, but Altaria isn't much of an attacker until she gets a few boosts with Dragon Dance. I like Altaria more because it has good typing, Vaporeon and Heliolisk to an extent already fill out the special attackers, and Umbreon + Metagross fill defense. Altaria makes for another physical attacker (and technically special if you want) that has moves that attack those Metagross can't compensate for, and since you already have Heliolisk, an Ampharos isn't really all that necessary (plus he's slow). Just my quick two cents.

I think you're seeing it in terms of offense too much, the team is actually inherently defensive.
I'm using metagross as an offensive pivot, basically heliolisk can volt switch or archeops "crobat" can U-turn into metagross and let him take the hit. Metagross being bulky enough that he can usually be patched up from a wish by Vaporeon and his massive HP.

My idea with archeops is adamant natured choice band, he hits like a fucking bus and can escape out with a U-turn. But Head smash harms him and brings him closer to Defeatist range, even though it hits for jaw dropping damage with stab and choice band. His other rock type stab being stone edge I've never liked because of the crippling miss chance and his best flying stab attack is Aerial ace. Meanwhile, Crobat has more natural bulk to take advantage of wish support, can absorb toxic, has Brave bird, U-turn and as you said, he's faster.

My special attacker is Choice specs Heliolisk "my favorite pokemon" and my physical attacker being choice band Crobat, now that I've decided it's indeed going to be Crobat.

I think altaria is going to take more consideration, basically I was using Ampharos as a special wall, but he's been made irrelevant because of Umbreon returning to it's former glory. So my idea was to simply go with a bulky mega Altaria, the Fairy typing allowing me to Volt switch or U-turn away from dragon types. I'm not sure though, I suppose I could use a more dedicated defogger or rapid spinner.

I could potentially switch crobat to dedicated defog support and keep archeops. Since he hits INSANELY hard.

Jutus u and your gay ass pokemon strats, what's stopping me from just slaying you with like, 6 level 100 charizards with a normal cutting move to slay your faggot fish dudes?

Vaporeon, vaporeon is stopping you from doing that.

Well there you go lol. I had to guess what the role of your pokemon were, and I wasn't a hundred percent sure.
