If you're drying out the chicken microwaving it, then you're using the microwave too long. I suggest looking at the microwave's power setting, and adjusting the time. Also, it's probably best to microwave in sort of "segments" in order to allow the chicken to rest and let the juices properly resaturate the meat. It's the same for a lot of cooking processes: let the meat rest and the juices filter back around.
