Are there any restrictions on what your RHG character should look like? In other words does it have to be exactly a 'stick figure'?
Or is it just something that you can actually animate?

It can be pretty much anything.

Try and keep stuff balanced, but other than that. anything.

Some examples: The French, Shinnai na Ame, Munch, Xevra (..I think she was an RHG)
but yeah, RHG isn't all about stick figures, it can be anything! RHG's main purpose is for the animator to practice their animations skills against another.

There are no restrictions other than the specific rules you can probably find in a sticky-thread located where all the RHG character pages are.
Which is simply formatting the text, a picture of the character, and a demonstration animation of the character available.
Relatively speaking people want to pick fights they can win, so if you want someone to fight you;
-Make sure your RHG character isn't invulnerable and has some form of legitimate weakness.
-Consider making your Demo a little bit lesser than your animation skill level.
