I can see how that would be useful for learning certain concepts, but don't you wish you'd start with a scripted language for a game development course? Or is the focus not really on programming?

I wouldn't know, there are two game-related subjects (Game Modding and Game Design, I frequently mix both of these up) and after that we'll be using Neverwinter Nights 2.

Most courses I know of start you off with Java

Yeah, same. The highschool course I took started off with Turing and then Javascript which I thought was okay for people who had literally no experience with programming. All the college level courses around though started right off in Java.

First year had me working on C++, then the next semester (or next school year) came and we did work on Java. It was difficult, though most of it was from my inattentiveness.
Like animation skills, I'm irreversibly corroded when it comes to coding. (HTML was kinda fun though, while it lasted).

Jesus christ, that's horrible.
If you know how to program in C++, there is absolutely no reason to make you work in some shitty drag and drop interface.

I think the 'development' before hand was just general coding, the actual development itself would come when I'm done with GS.

And on the topic of college, I'm taking community college classes right now to ease the financial aspect of things but I just applied to this university and am hoping to get in to the Communications program.
